Microbiological investigation of creamy ice creams |

Creamy ice creams collected from 55 different sale places were microbiologically and toxicologically investigated. The presence of coliform bacteria and E.coli was stated with MPN technique, aerobic mesophilic bacteria and Staphylococcus aureus by drop plaque technique, Salmonella and Listeria monocytogenes isolation was made by enriched medium. In 23.6% of the ice cream specimens total living aerobic bacteria, in 49% coliform bacteria, in 12.7% Staphylococcus aureus, in 7.2% E.coli presence was not appropriated and convenient to the microbiological criteria report (No. 2001/19). Following the toxicological analysis of the specimens no toxin was encountered. In conclusion according to the microbiological analyses 56% of the ice creams specimens were not conform to the microbiological criteria report and the microbiological quality was defective leading to negative effects on health.
